VEGANUARY: Mixed bean chilli

Ingredients

  • 4 tsp olive oil
  • 1 red onion roughly chopped
  • 1 red pepper
  • 1 tbsp cajun spice mix
  • 800 g mixed pulses in water rinsed and drained
  • 400 g chopped tomatoes
  • 150 ml vegetable stock
  • 1 tbsp dark chocolate
  • 4 tbsp soured cream and chive dip
  • 4 baking potatoes / sweet potatoes medium
  • 200 g quorn mince

Instructions

  1. For the chilli, put the oil into a casserole dish and fry the onion and pepper for 5 minutes. Add Cajun spice, pulses, tomatoes, quoin mince and stock. Cover and simmer for 20-25 minutes. Remove casserole from the heat and stir in the chocolate until melted. Ladle the chilli into bowls, top each with 1 tbsp soured cream and serve with rice! Enjoy!
